Raspberry and Lemon Cheesecakes

I love this recipe when I have guests coming over. It’s fast, easy and super tasty. Everyone is always impressed as they thyink they take a whole lot more work thatn they really do. From my table to yours…. Enjoy !!!


500 gm Cream cheese
140 gm Caster sugar
100g Sour cream
40 ml Lemon juice
2 Eggs
Texas muffin papers
60 gm Frozen raspberries

Method: (makes 6 )
Preheat the oven to 160C
Place the sour cream, lemon juice and eggs into a blender process till smooth.
Then add the cream cheese and the caster sugar blend till smooth.
Place muffin papers into 6 cup Texan muffin pan. Pour approximately 130gms of the mixture into each cup.
Sprinkle each with a few raspberries and bake for 25 minutes or until set. Refrigerate till cool.
Serve in muffin papers with some freshly whipped cream. Delicious !!
