Herb and Cheese Baked Eggs

I love breakfast food.  I know it is absolutely my day off when I have the time for the luxury of a leisurely breakfast with friends or even by myself.  Here is a quick and easy recipe to make at home which is sure to impress any guests or the significant other in your life.  Feel free to change to herbs for others to your liking.  Buon Appetito




  • Olive oil spray
  • 8 eggs
  • 1/2 cup thickened cream
  • 40g  tasty cheese (feta or gouda)
  • 1/4 cup finely chopped parsely
  • 1/4 cup finely chopped spring onion
  • Salt & freshly ground black pepper
  • Toasted bread, cut into soldiers, to serve


Preheat oven to 200°C. Spray eight 1/2-cup ovenproof dishes with oil to lightly grease
Crack two eggs into each dish
Pour the cream evenly among dishes
Sprinkle with the onion and herbs.
Season with salt and pepper. Divide cheese between them
Place dishes on a baking tray.
Bake in preheated oven for 20 minutes or until eggs are cooked to your liking.

Serve immediately with toast soldiers
