I was very lucky to be give this recipe by Mamma T for her famous Deviled eggs. They are a family favorite and I am honored to be able to make them and share them with y’all. Many heart felt thanks Mamma T xx
2 Table Spoons Pimentos (Finely Diced)
2 Table Spoons Onion (Finely Diced)
3 Generous Table Spoons Mayonnaise (If it ain’t Duke’s it ain’t the South !!)
2 Tea spoons Smoked Paprika
Salt & Pepper to taste
Place the eggs into a large pan and cover with cold water
Bring to the boil and boil for a further 10 minutes
As soon as they are cooked plunge into iced water and rapidly cool to prevent them going grey.
Allow to sit and cool completely through. 15-20 minutes. Then begin to peel.
Finely dice the onion and pimento
Remove the tops from the eggs and begin to remove the yolks and add into the mixing bowl.
Add in the Paprika and Salt & Pepper
Make sure you try and crush out the yolks
Add Dukes Mayonnaise. You may need to add a little less or a little more depending on the eggs.
The mixture should be creamy but still thick, adjust the seasoning at this point if required.
Place the mixture into a piping bag and begin to fill the eggs and replace their tops. You can use a ziplock bag and seal it and cut off the corner to make a disposable piping bag.
There may be mixture left over, you can always remove the top and add extra mixture into the eggs.
Dust with Paprika and serve. Amazing !!
