Turkish Pide

I love pizza as a quick and easy meal when we are having friends for a relaxed evening at home or even to take on family picnics and other relaxed outings.  This is a twist towards the middle east . . . . . It is DELICIOUS !!!

– Makes about 10

Pide dough
300gm baker’s flour
220ml water – lukewarm
2 tspoon salt
2 tspoon sugar
4gm dried yeast

Pide Filling
2 tbsp olive oil
100 gm diced bacon
1 diced onion
250gm feta
200gm olives
200gm peeled & diced sweet potato
200gm button mushrooms – quartered
2 table spoon chopped parsely
1 tspoon paprika
1/2 tspoon fennel seeds
1/2 tspoon pepper
Grated zest of 1 lemon


Pide dough
Dissolve yeast in the water with the sugar

Place flour and salt in a mixer bowl with the dough hook  attachment and mix

Slowly add the yeast/water to form the dough

Mix for 8-10 minutes.

Cover the dough with Olive Oil

Cover and leave to rise for an hour

Cut dough into 10 pieces and roll into balls then place on to floured trays to prove – this only takes about 30 – 45 minutes.

Heat the oil then add the onion and the garlic and cook until soft over a medium heat.

Add in the pepper, zest, both seeds, paprika and cook for 2 minutes.

Add the mushrooms

Cook until brown, add in the sweet potato

Add the olives

Add the bacon and cook through

Remove from the heat and allow to cool. Heat the oven to 220 C.  To assemble roll into a 25 cm oval shape

Divide filling between all the pides and pinch ends together and fold around

Divide feta between the 10 Pides and crumble over the top

Bake in a very hot oven until brown (10-12 mins)

Remove and allow to cool.

Squeeze over a little lemon juice when serving
