We used to spend holidays at the family farm in the rolling hills outside the city when we were growing up. For us it was a chance to roam free, dam the creek, catch our own Marron and explore. One of my favourite food memories are the Pumpkin scones Mum used to make that we would eat by the roaring wood fire to warm ourselves when we returned. They are DELICIOUS !!!
3 Tablespoons Butter
1 cup Sugar
2 cup cold mashed Pumpkin
4 cups Self Raising Flour
Preheat the oven to 200C. Cream butter and sugar
Add eggs and beat
Mix in mashed pumpkin
Add the flour and mix well
Stop mixing as soon as combined
Line the baking trays with greaseproof paper
Place spoonfuls onto the baking sheets, allowing enough room to expand
Bake until they begin to brown
Serve hot with lots of butter !!!
