Goats Cheese Souffle

I have never been scared to tackle any recipe head on and Souffle is something I do love to make, even though I have encountered the odd failure along the way.  This recipe is delightful, simple and displays perfectly the flavours of the cheese you use.  I adore great goats cheese and this is the perfect reason to cook with it !!

60gm butter
1/3 cup plain flour
2 cups whole milk
1/2 cup goats cheese crumbled
1/2 cup grated parmesan
4 large eggs, separated

Pre-heat the oven to 200C. Place the butter in a large saucepan and melt slowly on the heat.

Add the flour and cook for 1-2 minutes, stirring continuously.

Allow to come together and cook for a further 2 minutes

Then add the milk.

Add the milk in 3 portions.

Stir continuously to break down the lumps and bring to the boil.  Repeat 2 more times until all the milk is absorbed.

Place the egg whites in a clean bowl and beat on a high speed.

Once the sauce has boiled for the 3rd time remove from the heat.

When the egg whites form soft peaks stop beating

Add the cheese to the warm sauce mixture.

Add in the egg yolks also and combine well.

Begin to combine the egg whites into the sauce.  Combine it in 3 lots, being very gentle with the final portion to keep as much air in the mixture as possible.

Grease the ramekins and place into a baking tray.

Divide the mixture into the ramekins.  DO NOT OVER FILL.  

Place into the oven and bake for 25-30 minutes, or until golden, puffed and brown.
