Spanish Chicken

I must credit this recipe to Nigella.  I was reading through a post that came through on my facebook and just simply adored the idea and simplicity if this recipe.  Try, Bake and Enjoy !!!

30 ml tablespoons regular olive oil
12 chicken thighs (bone in, with skin)
750g fresh chorizo sausages, cut into 4cm chunks
1kg new potatoes, halved
2 red onions, peeled and roughly chopped
2 teaspoons dried sweet Paprika
1 cup fresh chopped parsely and oregano

Preheat the oven to 220°C. Put the oil in the bottom of the roasting tins.   Cut the new potatoes if too large or place whole into the pan.

Cut the red onions into large chunks and add to the pan.

Cut the chicken into large pieces and add to the pan.

Cut and add the Chorizo to the pan.

Add the paprika to the pan.

Add a good slug of oilive oil to the pan and mix well ensuring you break up any lumps of paprika and rub into the chicken flesh.

Place into the oven and bake for 30 minutes the mix through and bake for a further 30 minutes.

Remove from the oven, add the freshly chopped herbs and stir through.  Serve hot from the oven with fresh bread for the pan juices.  Amazing !!!
