This is an easy, quick and versatile side that can be used as a side, instead of toast with eggs or as a stack with bacon or proscuitto as pictured below. I have used these fritters before with poached eggs and bacon for a great breakfast stack. I hope you love them as much as we do 🙂
3 Medium Zucchini’s
1 Cup Plain Flour
1/2 cup chopped fresh Parsely
Salt & Pepper
100gm Shaved Proscuitto
Grate the zucchini’s into a bowl.
Add the coarsely chopped parsely.
Add the flour and evenly coat the zucchini.
Add the eggs and mix well. If the mixture is too dry add another eggs or too wet add a little more flour. Season well with salt and papper.
Place about 1/2 an inch of Olive Oil into a heavy based frying pan and place on a moderate heat and allow theat up.
When the oil has reached temperature, spoon in portions of the mixture to the size you desire.
Fry until golden on both sides. If the fritters are too thick you will need to place the fritters into an oven at 180 C to cook through.
When cooked remove and drain on paper towel.
Stack with the shaved proscuitto and serve. Awesome !!!
