I love to cook easy simple step recipes that are tasty and interesting not only for me but the people eating them. I love using common spices or ingredients in unexpected ways to get amazing results. This is one such recipe. The spices make the dish almost middle eastern and incredibly tasty and very unexpected. Enjoy !!
1 Red Bell Pepper
2 Brown Onions
1 t-spoon Cinnamon
2 t-spoon Smoked Sweet Paprika
3 Tbl-Spoon Olive Oil
Chives & Thyme
2 Cloves Garlic
500ml Chicken Stock
Salt & Pepper
Heat the oil and when hot add in the paprika and cinnamon.
Peel and dice the onion and garlic and add to the pan.
Sweat it out until the onion turns clear. Make sure the heat is not too high or the spices will burn.
Slice the tomatoes into strips and add into the pan,
Add in the Chicken stock.
Add a good amount of salt and pepper. Pre-heat the oven to 180 C
Once the mixture is boiling cut the potatoes into strips and the bell pepper. Finely dice the remaining herbs. Lay out the potatoes into a heat proof baking dish.
Add half the herbs to the liquid mixture and allow to simmer for a few minutes.
Pour the mixture over the potatoes.
Level out the mixture and sprinkle with the remaining herbs to finish.
Place into the oven and bake for 45-50 minutes or until golden. Serve and Enjoy . . . . . . . I know I’m going too 🙂
