My partner can’t get enough of Tzatziki and this recipe is awesome, especially when made 12 hours before of left to sit overnight.  Great as a dip on its own, or served with roasted meats and fish.  We have even used it as an alternative to hollandaise on breakfast !  Enjoy guys !

1 Cucumber (peeled, seeded & finely diced)
1 tub (400 gm) thick Greek yoghurt
3 cloves garlic (peeled & grated)
1 Tbl-spoon fresh lemon juice
2 Tbl-spoon Extra Virgin Olive Oil
1 Tbl-spoon Dill (finely chopped)
Salt & Pepper to taste

In a bowl combine Yoghurt, Garlic, Lemon Juice, Olive Oil and Dill.  Combine well.

Pat dry the cucumber with paper towels to remove excess water and add to the mixture.

Combine well and allow to sit in the fridge overnight.

Brilliant on it’s own or with anything !
