Hazelnut Crescents

Growing up in the Italian community we always had these biscuits for Easter and Christmas.  I remember making our festive visits and being spoilt with these.  One of my fondest childhood recipes I would love to share with you !

125gm butter chopped
1 t-spoon Vanilla Essence
¼ cup Caster Sugar
¼ cup Brown Sugar firmly packed
1 Egg
2 tbl-spoon pouring Cream
½ cup ground hazelnuts
½ cup Self-Raising flour
1.25 cups Plain Flour
½ t-spoon ground cinnamon
½ cup powdered sugar (approximately)

Into the mixer bowl with a mixing paddle add butter, vanilla essence, caster sugar, brown sugar and egg until creamed and smooth.

Stir in the cream, ground nuts, flours and cinnamon.  Should form a dough and continue to mix until smooth.

Cover and refrigerate for a minimum of 30 mins.

Pre-heat oven to 180c (350F)
Remove from fridge and start portioning mixture into t-spoon portions.  Shape into crescents.  Place on a trays lined with baking paper roughly 3cm apart.

Bake for roughly 15 minutes or until browned

Place onto wire racks to cool.

Sprinkle generously with Icing Sugar and serve.

To store these biscuits they must be packed generously with icing sugar as they will stick !
