Basil Zucchini

2 Zucchini
1 medium brown onion
1 large sprig Basil
salt & pepper
Olive Oil

Peel and dice the brown onion, finely shred the basil and slice the zucchini into 1/8 inch slices.

Heat a generous amount of olive oil in a large skillet, depending on the amount of zucchini to be cooked.  Add the onion and sweat until it is translucent.

Add the zucchini and cook until tender.  Add salt and pepper to taste and finally the basil.

Once the basil has been cooked through for 5 minutes, remove from heat and serve.

Simple and delicious !!!
