Pear and Almond Cake

My partner LOVES Bosch pears and when they are in season I try and use them as many ways as I can.  Here is a brilliant cake that is simple to make and everyone loves !


125 gm Butter
200 gm Sugar
2 Eggs – Large
250 gm Almond Meal
100 gm Flour
3 Fresh Pear (or tinned equivalent)
1/2 cup flaked Almonds

Pre-heat the oven to 180c
Cream Butter and Caster Sugar until light and fluffy.

Add eggs one at a time.

Stir in the ground Almonds and flour.

Peel, core and quarter the pears.

Grease an 8 inch cake tine and line with baking paper.

Spread the cake mixture evenly into the bottom of the pan and smooth out.  Evenly space out the pear quarters into the top of the cake and gently press in.  (please note – if you have too many pear quarters, please disguard.  Otherwise the cake will remain too wet and not cook through).  Sprinkle with the flaked almonds and place into the pre-heated oven.

Bake for 50-60 minutes.  Serve warm or completely cooled.
