1 Medium Can Corn Kernels
1 Red Bell Pepper
1/2 Brown Onion
1 Spring Onion
Oil for Frying
Drain Corn and place into a large bowl. Finely dice the onion, bell pepper and spring onion and add into the bowl. Stir through until evenly combined.
Now add enough flour until all the ingredients are heavily coated as per the picture.
Beat the eggs and add to the mixture and stir thoroughly. Your ready to cook.
Place the vegetable oil in a pan for frying. When the oil is ready test with a single kernel or corn. If it is ready proceed to spoon the mixture into the fryer, being careful not to overcrowd the fritters.
Turn over when golden and remove when browned on both sides.
Serve hot. Great for breakfast with bacon and eggs or as a substitute for english muffins in eggs benedict .
